If you’re feeding a teen athlete, you know the pressure of making sure they are fueled without turning your mornings into a full short-order kitchen. Make Ahead Cheeseburger Bites
Ingredients
Equipment
Method
- Preheat oven to 375℉. Place liners in muffin tin.
- In a large skillet over medium heat, cook the ground beef until browned. Turn off the heat and stir in the onion powder, garlic powder, ketchup and mustard. Mix well and season with salt and pepper to taste. Set aside.
- Open biscuit dough and cut 6 biscuits in half. Shape and flatten the biscuit half into a circle and place at the bottom of each muffin tin liner.
- Take one cheese slice and break into 4 equal pieces. Place 2 cheese pieces onto each biscuit in the muffin tin.
- Evenly spoon the meat mixture into each cup (about 2 tablespons). Gently press the meat down to pack it in.
- Bake at 375℉ for 6 minutes.
- Remove the cheeseburger bites from the oven. Take the remaining 6 slices of cheese and just like before, cut each slice into 4 equal pieces and top each bite with 2 pieces. Bake for 8-9 minutes or until golden brown.
- Remove from oven and let them cool slightly before serving.
Notes
- Each bite = approx 13g protein
- Store in fridge & reheat as needed
- Pack 2-3 for an easy high protein lunch
And what I love about this recipe is how versatile it is. Change the meat from ground beef to turkey. Switch out the colby jack cheese for swiss or pepperjack. Or add some chili flakes for a bit of heat. While it’s become a staple in our weekly meal prep, these high-protein cheeseburger bites also double as an easy, crowd-pleasing party dish. Add a little shredded lettuce and chopped tomato before serving and they instantly take on that classic cheeseburger look in a more elevated bite-size presentation.
At this stage of motherhood, anything that simplifies the day while still showing up for our kids is a win. These cheeseburger bites are one of those small shifts that make a big difference. Less stress, more protein and one more meal you don’t have to think twice about.
