Marinated Summer Vegetable Salad

This hearty appetizer is a crowd favorite. Summer vegetables at the peak of flavor mixed with tangy balsamic dressing give this dish a crunch and taste that is incredible. Serve these yummy vegetables with pita crackers and your guests will be eating up every last bite.

Marinated Summer Vegetable Salad

  • 12 Oz Cherry tomatoes
  • 1 Cucumber (Sliced)
  • 12 Oz Mushrooms (Sliced)
  • 1 Orange or Yellow Bell Pepper (Sliced)
  • 1 Sweet Onion (Sliced)
  • 1/2 Cup Balsamic Dressing
  • Kosher salt and freshly ground black pepper
  1. In a medium bowl, combine the tomatoes, cucumber, mushrooms, bell pepper, and onion. Mix well.
  2. Add the salad dressing to the vegetables and gently toss to coat. Add salt and pepper to taste.

Wine Pairing:

A Sauvignon Blanc, or the harder to find French wine Picpoul, balance out the tartness of the oil and vinegar in the salad dressing.
