Marinated Summer Vegetable Salad
- 12 Oz Cherry tomatoes
- 1 Cucumber (Sliced)
- 12 Oz Mushrooms (Sliced)
- 1 Orange or Yellow Bell Pepper (Sliced)
- 1 Sweet Onion (Sliced)
- 1/2 Cup Balsamic Dressing
- Kosher salt and freshly ground black pepper
- In a medium bowl, combine the tomatoes, cucumber, mushrooms, bell pepper, and onion. Mix well.
- Add the salad dressing to the vegetables and gently toss to coat. Add salt and pepper to taste.
