Stir-Fry Pumpkin Seeds
Crunchy, salty, and delicious, these pumpkin seeds are the perfect healthy snack to enjoy at home or on the go.
- 1 cup raw pumpkin seeds (cleaned & rinsed, no pumpkin fibers should be left on the seeds )
- 2 tablespoons olive oil
- 2 teaspoons sea-salt or other flavored salt
- In a large skillet, heat the olive oil over medium heat.
- Add the pumpkin seeds to the pan. Use a wooden spoon to mix and stir the seeds so they are all evenly coated in the olive oil.
- Cook the seeds over medium heat for 15 minutes, stirring often, until the seeds are brown and fragrant. Remove the seeds from heat and add the salt. Mix well.
- Pour the cooked seeds onto a paper towel lined plate to drain and cool.
How to clean your pumpkin seeds
Place the gunky pumpkin seeds in a large bowl. Fill the bowl with water. Using your hands, begin to rub and loosen the pumpkin fibers from the seeds. The fibers will sink to the bottom of the bowl and the clean seeds will begin to float to the top. Use a slotted spoon to remove the pumpkin seeds from the water and place them on a paper towel to dry.
