Parmesan Chive Smashed Potatoes

No holiday dinner table is complete without some kind of potato side dish. This recipe from Ina Garten’s Make it Ahead cookbook is unique because each person gets their own personal red potato that is slightly smashed, slightly crispy, and oh so tasty with Parmesan cheese and fresh chives. This dish can be made ahead of time which makes it another great recipe for holiday meal planning.

Parmesan Chive Smashed Potatoes

  • 1 Lb Small red new potatoes (Scrubbed)
  • Kosher salt and freshly ground black pepper
  • 3 Tbsp olive oil
  • 1/2 Cup Parmesan cheese (Freshly grated)
  • 2 Tbsp Fresh chives (Minced)
  • Sea salt
  1. Preheat the oven to 400 degrees.
  2. Place the potatoes and 1 tablespoon salt in a large saucepan and add enough water to cover the potatoes. Bring to a boil, reduce the heat, and simmer for 17 to 20 minuted, until the potatoes are tender when pierced with a skewer.
  3. Drain the potatoes and place on a sheet pan. With a potato masher or metal measuring cup, press each potato until it is about 1/2 inch thick (they will be messy).
  4. Toss the potatoes with olive oil, 1 teaspoon salt, and 3/4 teaspoon pepper.
  5. Roast the potatoes for 20 to 25 minutes, turning once, until the skins have become nicely browned. Sprinkle the potatoes with the Parmesan cheese and roast for another 2 to 3. Minutes, just until the cheese melts. Sprinkle the potatoes with the chives and salt and serve hot.

MAKE IT AHEAD:

Boil the potatoes and smash them on the sheet pan.  Roast the potatoes and finish the recipe before serving.
