This delectable appetizer is a hit at any soireé. Savory marinated artichoke hearts are chopped then mixed with pungent Parmesan cheese and tart mayonnaise. This dip is thick, hearty, and tastes amazing with taco chips, crackers, crunchy veggies, and toasted baguette slices.
Parmesan Artichoke Dip
- 4 ounces artichoke hearts (drained and finely chopped)
- 1 cup Parmesan cheese (grated)
- 1 cup mayonnaise
- fresh ground pepper
- Preheat oven to 350°F.
- In a medium size bowl, mix the artichokes, cheese, and mayonnaise until blended.
- Pour mixture into an oven proof dish. Place dish in oven and cook for 20 minutes or until the mayonnaise has browned and is bubbling.
- Take out of oven and let cool for five minutes. Garnish with fresh ground black pepper before serving.
For a healthier version of this dip, substitute light Parmesan cheese and light mayonnaise.
