Introducing a rosy-hued version of the popular French 75, the Blushing 75. Pink, bubbly, and delicious this Valentine’s Day champagne cocktail is easy to make…and easy to drink. Whether you’re hosting a Galentines Girls Night or a romantic dinner for two, this recipe will help make your celebration a bubbly blast.

  • You can serve this beautiful drink in any type of wine or champagne glass but these coupe glasses from CB2 are my current fave.
  • I like to use this rosè wine to make the simple syrup
  • Use exotic garnishes (like edible glitter, edible flowers, or these fun heart shaped cocktail picks) to personalize this drink to your taste or party theme.
  • This Valentine’s Day stunner may look innocent but don’t be deceived. It’s delicate hues hide a powerful punch that could leave you weak at the knees (Valentine’s Day pun intended). I definitely recommend having heavy appetizers or a meal while enjoying this Blushing 75.

Blushing 75

A delicate pink sparkling cocktail that's as potent as it is pretty.

Ingredients
  

Rosé Simple Syrup

  • ½ cup rosé wine
  • ½ cup sugar

Cocktail

  • ¼ cup gin
  • 2 tbsp rosé syrup
  • 2 tbsp lemon juice
  • 2 lemon slices
  • 1 bottle chilled sparkling rosé wine

Instructions
 

  • Stir together rosé wine & sugar in a small saucepan over low heat. Stir occasionally until the sugar dissolves. Remove from heat & let the syrup come to room temperatature before using.
  • Combine gin, ¼ cup of rosé syrup & lemon juice in a cocktail shaker. Fill with ice & shake vigourously. Pour into a chilled champagne glass (I prefer the coupe style). Top with the chilled sparkling rosé to taste. Garnish with the lemon slice and serve immeaditaely.
