Crisp Chicken with Sweet Tomatoes & Basil

This dish is a super simple one pan meal that is ready in an hour but is full of flavor. Savory chicken, sweet tomatoes, creamy cannellini beans and fragrant basil all come together to make this meal a one pot wonder and a family favorite in my home. I made this recipe on my Instagram Stories earlier this week and had messages to share it with you all, so here you go. Enjoy!

Crisp Chicken with Sweet Tomatoes & Basil

A simple and flavorful one pan dish that is nutritious and bursting with flavor.

  • 4 chicken thighs (bone in and skin on)
  • 1 pint mixed cherry tomatoes
  • 2 whole tomatoes (stemmed and quartered)
  • 1 handful fresh basil (leaves whole and stems chopped)
  • 1 shallot (finely chopped)
  • 1 14 0z can cannellini beans (drained)
  • olive oil (to taste)
  • salt and fresh ground pepper (to taste)
  1. Preheat the oven to 400 degrees.
  2. Place the cherry tomatoes, tomatoes, basil leaves & stems, shallot, and cannellini beans in large oven proof dish.
  3. Sprinkle with salt and pepper. Pour about 2 tblsp of olive oil onto the mixture and gently stir to combine.
  4. Place the chicken thighs, skin side up, on top of the tomato mixture. Drizzle the meat with olive oil and sprinkle with salt and pepper.

  5. Place the chicken dish in the oven and cook for 45 minutes.

*you can substitute bone-in skin on chicken breasts for chicken thighs. If you decide to use the larger chicken breast, you will need to increase the cooking time by 15-20 minutes

**spice up this dish by adding 1/2 tblsp red pepper flakes to the tomato mixture.

***serve with crusty bread or over mashed potatoes or plain noodles. Pairs well with pinot grigio.
