Summer is the season for sipping ice cold cocktails in the hot sun. A dear friend of mine served this refreshing cucumber mint lemonade cocktail at a pool party and I was instantly hooked. The cucumber and fresh mint combo cuts the lemonade’s sweetness and makes this drink a dangerously delicious summer libation.
Cucumber Mint Lemonade Cocktail
- 1 medium cucumber (chopped in 1/2 inch pieces)
- 1 cup Fresh mint leaves
- 1 52 oz jug Simply Lemonade ((I like to use the light version to cut down on sugar and calories))
- 2 cups Vodka
- In a large glass pitcher, muddle together the cucumber and mint.
- Add the vodka and lemonade to the pitcher and stir well.
- Serve over ice.
- ***For extra flair, garnish the glass with sliced lemon, cucumber, and a fresh mint sprig.
I love to use this muddler when I make this cocktail recipe. If you do not have one, use the back of a large serving spoon to muddle the cucumber and mint leaves.
