Add eggs and vanilla to the butter and blend with a fork.
Slowly stir in the flour, baking powder, and salt. Mix all together.
Wrap the dough in plastic wrap and refrigerate it for at least one hour or up to one day.
Preheat oven to 375 degrees. Working in small batches, roll out dough onto a floured surface with a floured rolling pin until the dough is 1/4 inch thick. Dip cookie cutters in flour then use them to cut out shapes in the dough.
Bake cookies for 8-10 minutes. Let them cool then transfer them to a wire rack.
Notes
