Crisp Chicken with Sweet Tomatoes & Basil

- 4 chicken thighs bone in and skin on
- 1 pint mixed cherry tomatoes
- 2 whole tomatoes stemmed and quartered
- 1 handful fresh basil leaves whole and stems chopped
- 1 shallot finely chopped
- 1 14 0z can cannellini beans drained
- olive oil to taste
- salt and fresh ground pepper to taste
Preheat the oven to 400 degrees.
Place the cherry tomatoes, tomatoes, basil leaves & stems, shallot, and cannellini beans in large oven proof dish.
Sprinkle with salt and pepper. Pour about 2 tblsp of olive oil onto the mixture and gently stir to combine.
Place the chicken thighs, skin side up, on top of the tomato mixture. Drizzle the meat with olive oil and sprinkle with salt and pepper.
Place the chicken dish in the oven and cook for 45 minutes.
*you can substitute bone-in skin on chicken breasts for chicken thighs. If you decide to use the larger chicken breast, you will need to increase the cooking time by 15-20 minutes
**spice up this dish by adding 1/2 tblsp red pepper flakes to the tomato mixture.
***serve with crusty bread or over mashed potatoes or plain noodles. Pairs well with pinot grigio.
