Method
- Preheat the oven to 400 degrees.
- Place the cherry tomatoes, tomatoes, basil leaves & stems, shallot, and cannellini beans in large oven proof dish.
- Sprinkle with salt and pepper. Pour about 2 tblsp of olive oil onto the mixture and gently stir to combine.
- Place the chicken thighs, skin side up, on top of the tomato mixture. Drizzle the meat with olive oil and sprinkle with salt and pepper.
- Place the chicken dish in the oven and cook for 45 minutes.
Notes
*you can substitute bone-in skin on chicken breasts for chicken thighs. If you decide to use the larger chicken breast, you will need to increase the cooking time by 15-20 minutes
**spice up this dish by adding 1/2 tblsp red pepper flakes to the tomato mixture.
***serve with crusty bread or over mashed potatoes or plain noodles. Pairs well with pinot grigio.
